Antifungal Bread Substitute: made from almond flour



Antifungal Bread Substitute: made from almond flour, and it truly is very simple to make! It freezes great; you can make a double batch so you always have some on hand. You can add any spices you want to add some pizzazz or just keep it plain and simple. Either way, it’s a great healthy bread option.



1 cup blanched almond flour
2 teaspoons olive oil
2 Tablespoons cold water
1/2 teaspoon salt
2 Tablespoons fruit juice sweetened dried cranberries
1 Tablespoon raw sunflower seeds
1 stem of fresh, tender rosemary

Preheat oven to 350. reserving about half of the sunflower seeds, place remaining ingredients into a food processor and process until combined and holding together. With processor turned off, sprinkle remaining sunflower seeds evenly over the top of the mixture. Replace lid and pulse just to combine and coarsely chop remaining sunflower seeds.
Carefully remove dough from bowl and form into a ball. Place the dough onto a piece of parchment paper and top with a second sheet of paper. Roll dough out until is is about 1/8 inch thick, trying to keep the thickness as even as possible, especially near the edges. Remove top sheet of paper. If desired, sprinkle dough with a tiny bit more salt.
Cut dough with a long knife or pizza cutter into cracker sized pieces. Transfer dough (on paper) to a baking sheet.
Bake for about 10 minutes. Rotate pan and bake for about 5 more minutes. Allow crackers to cool before serving.

What are you feeding YOUR brain?



Besides obesity, ADD (Attention Deficit Disorder) and ADHD (Attention Deficit Hyperactivity Disorder) are huge issues that our children are being diagnosed with. Did you know that if you take a pinch of sugar, a pinch of yeast and add milk, it will turn into alcohol in less than 60 seconds?  So a breakfast of milk and cereal could be sending our kids off to school a little tipsy! And then for lunch they are usually eating some type of bread loaded with yeast, a sugary treat and chocolate milk (which is also loaded with sugar).  It's no wonder the teachers are having issues with children’s behavior! Diet is a big issue & we have found an outstanding breakthrough in brain health.  Call me if you know someone that could benefit from great information.

Children’s School Lunches



A recent study found that students who regularly ate lunches bought at school were 29% more likely to be obese compared to those kids who brought their lunches from home. Unfortunately most school lunches are completely processed packaged foods that are loaded with sugar, corn and yeast, not to mention a ton of chemicals. The fact is that packing your child’s lunch every day is one of the most important things you can do for them.  It is very much worth the effort!

Denni’s Quinoa Pancakes



2 teaspoons coconut oil (or grapeseed oil)
1 whole egg
2 egg whites
1/2 cup cooked quinoa (prepared in water, not broth)
1 packet stevia, optional
Melt coconut oil in a small skillet over medium-high heat. (I prefer a well-seasoned cast iron skillet, but a safe/green non-stick would work, as well.) Beat egg and egg whites together well. Stir in quinoa and stevia, if using. Pour mixture into oiled pan. Immediately cover pan with a tight fitting lid. Cook for 1 minute. When you check, the bottom should be just golden brown and the top should look almost completely set. Flip pancake and cook on second side for one additional minute. Serve immediately.  I put berries on top of mine, yummy!
